Congratulations on your new phone! If I am understanding you correctly you are trying to change the country but are unable to. If you are trying to change the iTunes Store, iBooks or App Store country or region, please review the following article: Change your iTunes Store, iBooks Store, or App Store country or region . If it's the Language and Region in Settings, please review this article: Change the language on your iPhone, iPad, or iPod touch .

If this doesn't resolve your issue, please report back with additional information and let us know what country it originally was and which one you are trying to change it to. Also, where at on the phone you are trying to change it.
