There is no company that I know of that you will let you purchase anything online without paying for it. And, most companies charge your credit card when the item is shipped, so that is several days before it gets to the store.
If you want to pay in the store, just buy the product in the store.

I went through the process of purchasing one iPhone 8 Plus on apple.com and the only options were to have it delivered or visit my nearest Apple Store to pick it up in person. Regardless of which I selected, I was required to pay for the device before my order was processed.

I would wager it is done this way simply to assure the device is actually paid for, as otherwise it would be entirely òssibly for people to order iphones, have them shipped to a store, and never pick them up and pay for them, costing APple tons of money in shipping and stocking costs.
The iPhone 8 should be readily available to buy directly at an Apple store, so no real reason to want to order online ahead of time.
I've never heard of that option. When you buy online I think you have to pay during the purchase process.
