Mac mail, IMAP, Iphone not playing well together

Hi I'm have a new imac and am using an IMAP mail server (Shaw in Canada).

I have multiple folders setup to sort my incoming mail on my mac as I always have. My phone would usually get all mail, unsorted.

Now however, when the mail is sorted on my mac into specific folders, it's deleted off the server the moment it gets sorted. It does this before is sends to my phone, so I'm not receiving any mail on my phone.

Is this a server-side thing or am I missing something with the latest Mail program on the new computer?

iMac (Retina 5K, 27-inch, 2017), macOS Sierra (10.12.6)

I think I've solved it by using Smart Mailboxes instead of folders to organize my mail. The Smart Mailbox doesn't "move" the messages, more like mirrors them, so they stay in my inbox, thusly allowing for them to be sent by the server to my iphone.
