where it says:


If you forget your Restrictions passcode, you need to erase your device, then set it up as a new device to remove the Restrictions passcode. Restoring your device using a backup won't remove the Restrictions passcode.


An Apple employee will do exactly the same thing.

It can’t be done through settings. You need to restore the phone as new but you can only reload a backup done before the restriction passcode was set. That passcode is included in a backup. So, technically, an Apple employee could restore the phone as new with your help to supple the Apple ID and passcode.
