Mail settings

Recently set up my iPhone SE. It wouldn’t let me set up the phone from a back up so I’ve had to start from scratch. Since I’ve installed the recent iOS update I cannot work out how to change the mail settings. For eg. automatically fetching emails when they come through. And also when they get deleted.
