How to get Notes from iPhone onto computer

Hi,

I take a lot of notes on my iPhone using the Notes app. I want to be able to edit the notes as one big text edit file on my computer. Does anyone know how to import Notes in this way? Someone at the apple store once did it for me (many years ago), so I do know that it is possible. Some of the notes are in various gmail folders and some are just direct to the iPhone. There are also almost 2,000 individual notes and so copy and paste isn't really an option. The solution they found at the apple store was surprisingly simple I believe although sadly I cannot remember how they did it. But they were able to compile all the notes into a single text edit file.
