If you are talking about subscriptions, you can cancel them per this guide:
View, change, or cancel your subscriptions - Apple Support
If you are talking about the iTunes account itself, there is no need to cancel it. Make sure all auto-renewing subscriptions are canceled, and then stop using the account.
