How do I put only one photo per slide in the Vintage Prints theme for a slideshow in Photos?

You can't have just one photo per slide for every slide in the Vintage Prints theme. It's the nature of the beast. If you want just one photo per slide you'll need to change themes. The only two themes that deliver just one photo per slide are Classic and Ken Burns.
