unable to back up apps

I am going crazy, both my wife and I have new Iphone X, we are trying to back up our current iphone 6 to itunes on our laptops. different laptops, both have 11.1.2 on the phones, and both laptops have 12.7.1 itunes installed on laptops. When phones are connected there is not an option for apps, on my device has. Music, Films, TV, Books, Audio Books, Tones, Purchased.

What are we doing wrong?

I am wanting to back up to laptop the old phones so we can restore and setup the new phones.
