since updating to iOS 11 on my iPhone & iPad there is no option on the control centre to stream to my Apple TV, only screen mirroring (which is useless) can this be fixed? I’m so lost without it 😢

Hi. You can generally enable AirPlay by tapping the AirPlay icon in the lower right of any iOS video player. But you can still enable AirPlay like you're used to. Open Control Center on your iPhone or iPad, and tap the "sound waves" in the corner of the music player controls. Then you can select Apple TV from the popup. See screenshot below.
