It should not be necessary to pair your Apple Watch manually.
Check that you are following all of the instructions here as appropriate, if necessary including under "Get help" in the first article:
- Set up your Apple Watch - Apple Support
- If your Apple Watch isn't connected or paired with your iPhone - Apple Support
- Switch your Apple Watch to a new iPhone - Apple Support
If you still wish to pair your Apple Watch manually, then tap on "Pair Apple Watch Manually" on your iPhone during step 3 of the setup process (as detailed and pictured in the first support article) and then follow the further instructions that are shown on your iPhone.
