Why are the "123" (key for selecting number/symbol entry mode) and (globe) (key for selecting emoji/other language keyboards) not in the same position when holding an iPhone 8 in portrait and landscape modes? It makes it incredibly difficult to hit the correct key in landscape mode.

I misunderstood what you were saying. Thank you for the clarification. Mine are not switched. Have you tried to reset your keyboard? What keyboards do you have selected? Unselect all of them, force restart then re-add them and see if that helps.
I was able to remove all the keyboards except the English language keyboard. Since no other keyboards were active, the (globe) button was completely gone and the "123" button took up the space usually occupied by the two buttons. When I added the other keyboards back, the (globe) button returned and is still swapped with the "123" button in landscape orientation.
You can unselect them.
I'm sorry, but that does not make sense to me. The two keys are still next to each other but in opposite positions. The iPhone X may have a slightly different aspect ratio and a notch to deal with, but neither of those things impacts the keyboard enough to justify the switch.
I will have to try this later. I will reply if it fixes anything, but I am skeptical it will help. I'm using Apple's regular keyboard that comes with iOS 11.1.2 on iPhone 8. English language, emoji and German language are the only "keyboards" I have installed. Can you even unselect all of the keyboard languages? Surely it will require me to have at least one selected.
The keyboard is this way to accommodate the iPhone ten's unique height/layout.
To be clear, by "incredibly difficult" I mean that muscle memory plays an important factor in typing accuracy. Yes, it can be relearned or overcome, but that comes at the cost of speed and accuracy.
