Apple Watch S3 and new iPhone..

I have an iPhone 8 Plus and Apple Watch S3 LTE.


I’ve actually just sold my iPhone and have to post it tomorrow. The problem is my new iPhone X won’t arrive for a few days.


Can I back up, erase my iPhone, post it and rely on just the watch for a few days? I know it will be using LTE a lot more so spank the battery but I should be OK, right?


Then I can restore my iPhone X from my 8 Plus backup and be back in business?


Will I have to unpair / pair or will the above ‘just work’?

So in the end I bottled it and did it the correct* way - I was scared about messing up my EE data plan.
* unpaired watch, which backs up watch to phone. Turned watch off :-(
Backed up phone to iTunes (would also work to iCloud).
Wiped and dispatched iPhone to new owner.
Used my old 5s for a few days.
Got new X, updated to 11.2, restored from iTunes backup.
Paired watch to phone, restoring watch from backup when prompted.

All worked fine.
