Apple has not advised of any changes to the heart rate sensor between model generations.
Apple Watch Series 1 is splash and water resistant, but should not be submerged in water:

Apple's instructions for cleaning, drying and handling your Apple Watch band are detailed here:
Note that they include cleaning and drying your band, Apple Watch and your wrist after workouts or heavy sweating.
Are you swimming across the Atlantic?
If not it's okay to swim with the Watch Series 2 & 3. (resistance 50 meters see Apple website)
Yes . there is a heart rate sensor/monitor, best in its class.
Reason i ask, it can be that bad where i am located so while the fish bowl may see extreme it's not for around here
so they can stay in the bowl for say weeks or months and not suffer anything other then a dead battery
so any heart rate monitor capability? can the apple watch compete with garmin and fitbit etc
what is different with the watch nike+ and the old nike+ sensor
so far i am excluded watch series 1, must be at least water resistant, the fishbowl is merely a simple test
the heart rate sensor looks like it can handle saline perspiration
impact resistance would be needed in case of a shark when the freestroke is changed for underwater combat in case a shark bit nicks the watch
skin grows back but shark resistance is of slight concern
it product design it under the idea of impact and penetration resistance
my phone has several clips to hold the connectors to add shock resistance, see a battery swap video to see them

If there are sharks in the water where you're swimming a tri, the survival of your watch is the least of your worries.
Watch Series 2 and 3 are okay in a bowl.
it has to swim with the sharks which is part of the triathlon
Sharks aside, for swimming, you would need an Apple Watch Series 2 or Series 3 model.
