Does the storage affect the performance of the iPhone or the performance is just about the chip and RAM?

The storage absolutely affects the iPhone's performance.
Once you get to filling the iPhone storage too much, performance degrades and may eventually fail.
"Too much" would be using 90% or more of the storage; perhaps somewhat less.
