You can delete downloaded books from the bookshelf in the iBooks app on your Mac by selecting a book and pressing the delete button on your keyboard. If you also don't want them to show in the cloud for redownloading you can hide them from there : Hide and unhide iTunes Store, App Store, or iBooks Store purchases - Apple Support
