Ever since I hooked up a HP 27er LED monitor with my Mac mini, the color randomly fades out to almost to pastel hues. I have to turn the monitor on/off to get the color back to normal. I understand this is likely a driver issue but I can't find downloads (or they don't exist). Any other options?

Re-check the monitor settings.
Try another HDMI cable.

What year model is the Mac Mini that you are trying to connect the HP monitor to...?
(go up on the menu bar and select Apple > About This Mac)
What combination of video inputs does that HP monitor have...?
(Display Port, DVI, HDMI or analog VGA)
What adapter and/or cable connection are you using...?
(HDMI to ???? or Mini DisplayPort to ????)
