how do I restore my inbox and messages from an external drive backup?

I have a new Mac to replace my prior Mac which crashed. I have a back up of all my files from a back up vendor that was sent to me on an external hard drive. How do I locate and restore all my mail folders to the new Mac?
I can see the Mail folder in in the back up Is there a documented process I can follow?
