Reconnecting AirPods to Watch

Here's the scenario:

• I connect my AirPods to my iPhone
• I start playing music on my Apple Watch - I listen via the AirPods
• I leave the iPhone at home and head to the gym
• AirPods are working great the whole time - music is playing & I'm a happy camper
• A phone call comes in. I answer it and conduct business via the Watch & AirPods
• After the phone call is complete & I hang up, I can no longer hear music over the AirPods
• Attempts to connect the Apple Watch to the AirPods is fruitless

So how do I reconnect my AirPods to my Apple Watch if my iPhone's not available?
