Backup information is incremental, so the backups are written over. The only backups that are not disturbed are those done before an update/restore. Those have a date/time stamp on them. Also, the backups are used for restoring the iPhone, and getting individual information from it is difficult. There are some 3rd party applications for the computer that claim to enable the ability to extract some backup information, but not all.

Again, the backup files are not intended to be accessed by outside software. They are intended to be used to restore the phone completely. What you find with 3rd party software is the best you can get.
