How do I delete an old Apple ID and use a different one? I tried to and this popped up: "Email used by another Apple ID. This email address is not available. Choose a different address."

You can't delete an Apple ID. Normally, this happens if the address has been associated with an Apple ID within the last year. If you are creating a new ID, remember all previous purchases are tied to the ID that made them and can't be transferred. A name change might be a better way to proceed.
