Change language of selected text in Pages for iPad

Hi,

How can I change the language of existing text in a Pages document on the iPad ?

I have text that's written in French, but which Pages considers to be in English, so it's marking lots of spelling mistakes. I can figure out how to change the language for new text (by changing the keyboard before you start typing), but I can't figure out how to change it for existing text.
