I have noticed that with the newest version of Sierra iOS none of the documents I save from emails or from a word document do not appear in the finder most recent list when i click on it afterwards

That does happen sometimes. I know for certain that documents that you don't fully open, but only view the preview of don't appear in recent items though. They should be in there after you fully open them in Pages/Word/Preview/Acrobat etc.
The recent items field in Finder does tend to break down after a while, and they only reliable way to fix that I foundit was to perform a factory refresh.
