Apple ID - If you can‘t choose None when you edit your Apple ID payment information
If necessary, contact iTunes Support. Scroll to the bottom of the page in the 2nd link.
What happens when you try to update it ? Is the field protected ? Are you getting an error message ? Have you tried selecting 'none' (if it shows) to remove the card's details, and then re-entered it from scratch ?
"Payment information could not be updated.
Your payment method was declined. To make this purchase, provide a new payment method for your Apple ID."
I have changed the Valid Date/Expiry Date with no luck - it is not allowing me to use the same card even though I have tried to update the expiry date - very frustrating
You've tried just logging into the account, not when trying to download something, and seeing if you get the 'none' option so that you can remove the card, and then tried re-entering its details from scratch ?
Have you tried changing the information somewhere else, such as using the web site?

Hi Eric - I have tried on the website without success.
Apple ID is not allowing me to update my payment method - I am trying to update the expiry date and back of card code. Why can't I??
