I would like to write text in one place and have it appear in other places in the same document. Can and how do I do that? Using Pages V6.3.1.

Nope.

Word allows you to assign a value to a variable which can be reused in multiple document locations. Pages is not a Word clone, and does not support this capability.

One could use placeholder text in multiple document locations, and by way of AppleScript, automatically one-time replace all placeholder text fields with the original text throughout the document.
