I have an iPhone 6.
Can I use wifi in Europe without local SIM card and without incurring US roaming charges by keeping my phone on Airplane mode? Which setting should my phone be on?

Sure, anything that is just internet data should be fine over wifi. So any internet messaging service like iMessage, Whatsapp, Google Hangouts, etc should be fine. And any VOIP service should be fine - Skype, FaceTime, etc.

Sure. Just go into settings and enable airplane mode. Then use settings, wifi to turn just the wifi radio back on. The cellular radio remains off.
Note that you cannot get SMS/MMS messages though. Those require a cellular telephone voice connection. iMessages will work fine.
