My contacts are now shared with my spouse. We do not want to share contacts. We have one Apple account that we share for iTunes, but we have separate iCloud accounts. I use my Gmail contacts on my iPhone and iPad

Your ID is how identification (to Apple) takes place, at the moment you are your wife, and she is you. One each is a far better way of using an Apple ID, you can use Family Sharing for sharing content, but not identities.
Create a new Apple ID for your spouse. Apple ID's aren't meant to be shared.
But, i want to share the same credit card, with both of us able to buy whatever we want. what if i stop using my Apple Contacts and just use Gmail?
If you continue to share the same account nothing will change.
