What happens if I go to 50 gigs and then decide to go back to 5 gigs?

I currently have only 5 gigs cloud space and a 64 gig iPhone with 48 gigs used. I will probably move to a new iPhone soon and want to be sure I can back up the whole iPhone to the cloud, so I will probably take a monthly 50 gig plan to allow this. If I return to the standard free 5 gigs, after I buy the new phone and populate it with the cloud data, then what happens to the cloud data?

According to this article:

Manage your iCloud storage - Apple Support

"If you run out of iCloud storage, your device won’t back up to iCloud. New photos and videos won't upload to iCloud Photo Library. iCloud Drive and other iCloud apps won't update across your devices. And you can't send or receive messages with your iCloud email address. If this happens, you can make more space."

Beyond that its hard to say. You can determine what gets deleted by following the guidance in the "Make more space available in iCloud" section of the above article.
