I've got an iPhone SE with iOS 10.3.3 installed and I'd really like to know if downloading the latest update of iOS 11 could help me free a little bit of space (since I only got 16 GB to work with). Could you please tell me how much GB the new iOS take once installed?

Don't be concerned about how large the iOS version is ... instead note that iOS 11 offers additional tools to help you reduce your non-iOS (application, data, photo, etc.) space.
Once you install iOS 11, go to Settings > General > iPhone Storage and use the tools there to be certain you never have less than 1.6GB (10% of the iPhone's space) free.
