reset the e-mail and password iPhone 5c

My wife never backed-up her iPhone 5c and when her e-mail changed, that was not updated or changed either. Now we have an obsolete e-mail and cannot update the phone. How do we 1) back it up and 2) change the default Apple e-mail and passcode?

iPhone 5c, iOS 10.3.3
