How long will I be able to get software/Security updates for my MacBook Pro (15-inch, 2.53GHz, Mid 2009) laptop? Currently I am unable to download past OS X El Capitan10.11.6.

No, your Mac is technically "obsolete but the OS still is receiving security updates. "A couple of upgrade cycles" means the upgrades to Sierra and High Sierra. But that's just in the past and Apple doesn't announce when they will stop supporting a system.
