"remind me later" OS X update ignored!

Hi there,

I'm so cheesed off: Had been getting notifications re: Update prompt from Apple and chose "Remind Me Later" but it still pushed it through. It put our IMac into a seized state and the only way I could get computer back to responding was unplugging it!

How do I uninstall the updates I didn't want and prevent this from happening in the future?

What's with Apple asking you and then just railroading through anyway???
