How do I stop my sharing call log with husband who is on same itunes

There is no option or setting that will prevent call log sharing when using the same Apple ID. Apple IDs are not meant to be shared. You can have separate IDs and still share selected things, if desired, via Family Sharing. Family Sharing - Apple Support
