I have an iPhone X with up to date software and my time keeps changing!!

My time is set to New York eastern time... I live in the central time zone but work and go to school in eastern time zone ! Iv changed my time manually and turned off auto time zone so many times and it keeps reverting back randomly witch has made me an hour late to everything! It makes me nervous and it’s really fustrating ! Please help
