i’m going to be in a cabin in the mountains with no wifi for 2+ weeks and don’t plan on taking my apple watch with me. what would be best: 1) leave it on the charger the whole time, or 2) leave it off the charger and allow it to discharge completely?

I suggest following Apple's guidelines that apply when storing Apple Watch long term.
In order to preserve battery operation and maximise battery lifespan, Apple advises that you should store your watch with a 50% charge and then turn it off.
