Can have my iPad Pro engraved after purchase?

Not by Apple. They only offer engraving for custom orders since the case is engraved at the factory.

Another consideration--if you choose to sell the device at some later date, no one wants to buy an engraved iPad. I also, recommend getting a case. You could then put letters or stickers on it without damaging the device.

Just buy some gold letters stick them on the ipad.
