I live in Ireland. I’m on holidays in Spain now and thinking of buying the new iPhone. In Spain I can only buy AppleCare but I could buy AppleCare+ in Ireland. I see I would need to input the serial number of the iPhone to buy it, would the serial of the phone sold in Spain be valid when buying AppleCare+ In Ireland?

Since both Spain and Ireland are members of the European Union, and Apple treats the European Union as one country regarding iPhone purchases, I believe this would be just fine.
I would caution I am not an Apple employee, just a volunteer on these communities. I am not 100% certain of my answer, but I am quite confident about it.

Iphone warranty is only valid in the country of purchase I would buy in Ireland
Think you cannot buy iPhone in one country & apple care in another one.
