Adding Contacts from iMessage

I have the most recent iOS. I receive messages from numbers that I used to have in my old phone but didn’t carry over to my iPhone 8.

I click on the number and the picture is what I see. What am I doing wrong? How can I add the contact?

I tried everything in that article. I still can’t add contacts. Sometimes I am able to add the contact and sometimes all the items are frayed out and I cannot. Any help is appreciated.
