Why there’s apps that aren’t optimized for iPad Pro 10.5? Can’t iOS make this automatic? Cause apps like Spotify, Yahoo Finance, SoundCloud, aren’t using the iPad interface, instead they’re an upscaled version of the iPhone interface!

Both Spotify and SoundCloud have iPad versions, so I am not sure why you have iPhone versions on your iPad.
