Follow the instructions here to pair and set up your new Apple Watch, starting by updating your iPhone to the latest version of iOS and contacting Apple Support for assistance via the link in the article if necessary:

If your old Apple Watch is still shown within the Watch app, then it may help to first unpair it by following the instructions here, even though you do not have access to the watch:
If you are unable to proceed, then I suggest that you contact Apple Support via the link in the first article linked above, perhaps taking advantage of your initial 90 days of complimentary telephone-based technical support.

My iPhone's OS is the latest 11.2.1 now.
The old watch is still shown on the Watch app, but I cannot unpair that because watch app requires watch OS update of the MISSING one. Then my iPhone tries to update the missing watch, but it seems "checking update" forever.
Here's the problem.
To unpair a watch, I should have activated the watch on "Find iPhone" app or the missing watch should have apple OS ver. 2.0 or above. In my case, nothing matches...
That will be faster. Appreciate it!!!
