How to make my background screen black and text letters and number white?

In Settings -> Accessibility -> Accessibility Shortcut you will find an option for Smart Invert Colors.

It is not perfect, I don't think it is good for everyday use, but see if that helps for what you need.

You should also consider looking at third party keyboards. Some of them allow you to change the colors.

What does this have to do with Aperture?
