Apple Watch | Sending Read Receipts when function is turned off

I currently have the Apple Watch Series 3 with an iPhone 6S. I have the setting set to mirror iPhone messages on my Apple Watch and I do not have read receipts live on my phone. But, my sent messages are showing read receipts. I've made sure that all read receipt functions are off - alas, no luck. What can I do?
