If screen recording skype on iMac using quicktime, would the other caller know, and/or be able to stop this?

I am having to record some Skype calls as I don’t have enough time to make notes, would the other caller be able to know that I am recording the Skype call. I’ve had some incidents where QuickTime has suddenly stopped, and the recording freezes and it says ‘Cannot Capture’. When I play it back, the recording just stops part way through. Would the other caller be able to do something that could stop me recording at my end?
