I have been having problems with my bootcamp partition and decided to un-bootcamp my device and start from scratch.
I have managed to successfully remove and un-partition all of my previous Bootcamp Partitions, Problem is I am not able to un-partition the EFI Drive/Partition. The Disk Utility gives me "MediaKit reports not enough space on device".
This needs to be done before I can attempt to re-bootcamp my Mac.
Please Help ???

diskutil list
The EFI partition is required for macOS to function. If you want to erase the internal disk and re-install macOS, that is also possible.
The disk0s1 partition is marked incorrectly as Microsoft Basic Data, it should be EFI. Post the output of
sudo gpt -vv -r show /dev/disk0
It should not be deleted on a Mac.
Disk0 must be unmounted. Please try Command+S (Single User Mode).
The other option is to install macOS (same version as your internal drive) on an external drive and boot from it.
You will need to run
gpt remove -i 1 /dev/disk0
gpt add -b 40 -i 1 -s 409600 -t efi /dev/disk0
to correct the issue. You need to boot into Internet Recovery and unmount disk0 before you can do that.
Please remember to back up macOS.

I tried going the route of reinstalling MacOS but If I try to erase the (entire) internal hard drive in recovery mode I get an error.

Im Having a bit of trouble booting into Internet recovery. After the bar under the rotating globe is full the Apple logo is displayed but it will not go further. Is there any other way I can do this ?
Maybe Single User Mode ?
