How can I type any thing with the "Smart Keyboard"? Which includes, just for starters, the characters | {} [].
It is a german keyboard that does not have them natively.

You should be able to type them just the same way you would with a normal German Mac keyboard:
| is at option/alt 7
[ ] are at option/alt 5-6
{} are at option/alt 8-9
Does that not work?
It occurs to me you might be a Windows user and thus have no experience with the Option/Alt level of Mac keyboards. If that is the case, you may find this map for the German layout useful:
