Hello!
I'm working on my new MacBook Pro and need to install office (specifically for word and excel) - what is the best way to go about doing that? Do I have to pay Microsoft monthly or is it something I can download once?

Try Microsoft.com. Office 365 for Mac is the product. The price is $99/yr for an annual subscription. You can buy a single-user copy for $139 but it cannot be upgraded, only updated. Your choice. The download is from MS. Office is not an Apple product nor is it supported by Apple.
If you do not have to send Word files to others daily, there are other low cost solutions.
Pages can read Microsoft Word files, and can write word files IF you ask for it explicitly.
Open Software packages like LibreOffice or OpenOffice can read word files and write word files on request.
