watchOS does not include a built-in hourly chime feature, with or without the option of receiving only haptic alerts.

Alternative solutions include scheduling timed Reminders or setting multiple alarms on your Apple Watch and then enabling Silent Mode on your Apple Watch, which mutes sounds whilst still delivering haptic alerts:
Silent Mode can be enabled:
Via Control Centre on your Apple Watch, by tapping the Silent Mode button (crossed out bell icon): or via the Watch app on your iPhone:

- On your iPhone, in the Watch app, go to: My Watch (tab) > Sounds & Haptics > enable Silent Mode.
Also check that haptic intensity is set to the central or right hand position on the Haptic Strength slider, either within the Watch app (also under Sounds & Haptics) or directly on your Apple Watch:

Note that:
- Silent Mode will also affect other sound-based alerts.
- Silent Mode does not mute alarms when your Apple Watch is on the charger and connected to power.
You may otherwise find that a third-party app meets your needs.
To browse and search for third-party apps with the results pre-filtered to include only those iPhone apps that also include an app for Apple Watch, use the Watch app on your iPhone. Apps can be searched by keyword or app name via the Search tab.
