Hi
It is not possible to access historic Weekly Summary reports or to print them off from your iPhone.
Historic Activity results can be viewed in the Activity app on your iPhone, including daily summaries and, via the Workouts tab, records of all past workouts.
More information:
Moving forward, you may wish to take screenshots of each Weekly Summary on your Apple Watch:

You may find that a third-party app meets your needs in providing summaries and breakdowns of historic data.
Apps that you may wish to consider include, for example:
HealthView on the App Store
- "HealthView app integrates with the Apple Health app and allows you to see your health data in a broad clean way, by allowing you to drill down to more details in an easy and quick way! "
- Overview:

Activity++ on the App Store
- "Activity++ is designed to help you make sense of all the health and fitness data being collected by your Apple Watch"
HealthDash for Health App - Activity Dashboard on the App Store
- "HealthDash lets you view health data in a brand new way"
To browse and search for these and/or other third-party apps with the results pre-filtered to include only those iPhone apps that also include an app for Apple Watch, use the Watch app on your iPhone. Apps can be searched by keyword or app name via the Search tab.
Follow the instructions here to add and use compatible apps on your Apple Watch:
