You are confusing two separate products. Without a subscription, you are free to buy any songs you like and keep them as long as you live: the number you can have is limited only by what you can afford.
On the other hand the Apple Music subscription gets you access to a massive number of songs - you can listen to as many of these as you like for the cost of the subscription, but not to keep them: if you stop the subscription you can't go on listening to them and any you have downloaded to listen to online will stop working. None of that affects purchases you have made.
Think of it as being like the difference between buying DVDs and subscribing to Netflix. If you don't want the subscription just cancel it and continue to buy items as before.

You do not have to subscribe to Apple Music. Just say no when it asks.

I think you should take a deep breath and look at your options. You don't have to subscribe.
