how do I update OS to an older version

My Mac OS is out of date 10.10.5, I am nervous about upgrading all the way to High sierra and would prefer to update to an older version of the OS 1st... app store only seems to have current version high Sierra.

MacBook Air, iOS 10, 10.10.5
